Brazil nuts have a unique and delicious taste that is adaptable for many different kind of dishes, desserts, bakes or drinks. Here you have some ideas what you can do with this amazing nut!

BRAZIL NUT PESTO

Brazil nuts take this pesto down a new delicious path! They offer a nutritional dose of selenium and protein, and combined with walnuts this pesto also offers those important omega 3 fatty acids.

But, beyond all these healthy benefits, this pesto tastes terrific, and is a complete breeze to make!


INGREDIENTS:

½ cup raw brazil nuts bran

¼ cup raw walnuts (or can use pine nuts)

1 medium-large clove garlic, quartered

2 Tbsp water (see note)

¾ tsp sea salt

freshly ground black pepper to taste

3 Tbsp brazil nut oil

2 Tbsp water (see note)

3 cup (lightly packed) fresh basil (tender leaves and stems only)

¾ lb(s) dry pasta of choice (see note)

extra brazil nut oil, salt, pepper, and lemon wedges for serving (optional)

HOMEMADE BRAZIL NUT BUTTER

Healthy nut butters are becoming seemingly popular because they are delicious, full of nutrients and can be used in so many different ways.

INGREDIENTS:

Brazil nuts bran

Pink Himalayan salt

Brazil nut oil

Maple syrup / cinnamon (optional for those with a sweet tooth)

Food processor

Spatula

Tight glass Jar (to contain butter)

BRAZIL NUT CHEESE WITH HERBS

1⅓ cups    Brazil nuts bran

3 Tbsp Brail nut oil, for drizzling

¼ cup Lemon juice

½ tsp Salt

2 cloves Garlic (sliced)

⅓ cup Fresh herbs, (e.g. rosemary, thyme, parsley, finely chopped)

½ tsp Freshly ground black pepper

A no-bake Christmas treat that can easily be adjusted according to your own preferences. It's wonderful for making with children too.

250g/9oz dark chocolate, chopped

150g/5oz milk chocolate, chopped

175g/6oz butter, softened, plus extra for greasing

4 tbsp golden syrup

200g/7oz amaretti biscuits

150g/5oz shelled Brazil nuts bran

150g/5oz red glacé cherries

125g/4oz mini marshmallows

1 tbsp icing sugar

edible glitter, to decorate (optional)

SOUFFLÉ CRÊPES WITH BANANA, BRAZIL NUTS AND CHOCOLATE PIECES

55g/2oz plain brazilnut bran mixed with flour (2/3 brazil nut, the rest flour)

1 tbsp caster sugar

1 free-range egg

enough milk to form a batter

10g/2 tsp butter for cooking

2 free-range eggs, separated

4 tbsp caster sugar

2 tsp butter for cooking

2 bananas, peeled and chopped

30g/1oz chocolate, chopped

30g/1oz brazil nuts, chopped
